2 cups uncooked quick cooking oats
½ cup packed brown sugar
½ cup cried cranberries (craisins)
1 tablespoon chopped walnuts
1 teaspoon baking powder
1½ cups milk
½ cup applesauce
2 tablespoons butter, melted
1 large egg, beaten

1. Preheat oven to 375º.

2. Coat an 8x8 baking dish with cooking spray.

3. Combine the first 5 ingredients in a medium bowl. In another bowl, combine the milk, applesauce, butter, and egg. Add milk mixture to oat mixture; stir well. Pour oat mixture into the baking dish.

4. Bake for 25 minutes. Serve warm.

The bake time can be adjusted 5 minutes either direction depending on how firm you want the oatmeal bake to be. I usually cook mine for 30 minutes.

When you combine the milk an oat mixture, it may seem like it is way to soupy, but it will be fine. The oats will absorb the liquid.

I often bake this on the weekend and then eat it for breakfast throughout the week. I reheat it in the microwave for 90 seconds with a little milk.

This recipe is pretty adaptable, you can substitute rasins or other dried fruits for the dried cranberries, or leave them out all together. You can also mix in additional items, like chia or flax seed to add more fiber. If you add something that is wet, like mashed banana, you will need to lower the amount of applesauce, or remove it altogether, otherwise you it might not get firm.
