1¼ c. white sugar
½ c. softened butter
2 large eggs
2 c. unbleached or all-purpose flour
1 tsp. baking powder
1 tsp. baking soda
½ tsp. salt
1 c. mashed bananas (approx. 3 medium bananas)
1 c. buttermilk
1 tsp. vanilla extract

Preheat oven to 350º F
Grease a 9"x13" baking pan
In a large mixing bowl cream together the sugar, softened butter & eggs
In a separate bowl blend together, with a whisk or fork, the flour, baking powder, baking soda and salt
Add the flour mixture to the sugar, butter and egg mixture
Blend on low until well mixed
Add the buttermilk a little at a time, then the vanilla extract and the bananas
Mix on low until well blended.
Then mix on medium until batter is smooth and creamy (about an additional minute)
Spread the batter evenly into the greased pan and bake at 350º F for 25-30 minutes
The cake is done when it is light golden in colour and just starting to pull away from the edge of the pan. Make sure not to overbake because that will make it dry
