Lamb shanks
Calf or Lamb liver
Onion whole
Bay leaf
Rice

Avgolemono
1-2 Eggs
Lemon juice

Directions:
Directions:
1. Boil lamb shank in water.
After boiled throw away water and add fresh water, onion, & bay leaf.
Add chicken paste.
Cook until meat is tender.
Take the onion and bay leaf out and throw away
Shred the meat
Add rice
Cook until rice is done

2. In a separate pot, add liver and water.
Boil for about 5 min & throw away water.
Then add fresh water to the liver and boil until liver is cooked, about 45 min.
Take out of water and cut liver into cubes.
Throw the water away.

3. Add liver to the soup.

4. Make avgolemono and add to the soup.

Avgolemono
1. Beat egg whites until very stiff
2. Add yolk one at a time and continue to beat
3. Continue to beat and add lemon juice
4. Continue to beat while very slowly adding hot broth
5. Slowly pour back into pot after 4 cups of broth added to egg mixture
