Frozen chicken breast (or canned chicken, drained)
Salsa (use your family’s favorite-mild, medium or spicy)
Canned black beans (or kidney beans), drained & rinsed
Frozen corn (can substitute other vegetables that you/your family enjoy)
Cheese (optional)

Optional Toppings when plating:
Add more flavor, texture by adding toppings to your liking (all but last 2 can be added to the pot): Green Onion, Tomatoes, Canned Green Chilies/Jalapenos (mild or spicy), Fresh Cilantro, Fresh Basil, Avocado, Crushed Croutons or Corn Chips

Chicken can be left whole after cooked or shredded up with a fork making it more like a stew and stretches the meal for larger groups.

Use your crock pot or Instant Pot - 3 hours on high in Crockpot or 30 minutes on high (Meat setting) in Instant Pot. Cooking time varies on how full you fill your pot.

You may need to add some water depending on your salsa & vegetable choices, so it doesn’t burn on the bottom of your pot.

The best part of this meal is plating the meal. Dress it up and make it look fancy.

Put 1 portion of chicken on each plate.
Optional: Top each portion of chicken with 1 slice of cheese – cheddar cheese, mozzarella or pepper jack.
Top with a large spoonful of the salsa, black beans, corn mixture.
