Preheat the oven to 350º F.

To serve 2:

2 chicken breasts
2-3 diced Roma tomatoes
garlic to taste (4-6 cloves) minced or pressed
1 jar (~400 g) of alfredo sauce of some type
1-2 Tbsp tomato paste (depends on how rose you want it)
1 chopped onion (pan fry first if you like)
¼ cup parmesan cheese shredded or powdered
¼ cup mozarella cheese shredded

Season to taste with pepper, salt, lemon pepper, and garlic

Brown the chicken breasts in oil with your chosen seasoning. Mix tomato paste and alfredo sauce with chopped tomato, garlic, onion, salt, and pepper in a saucepan on the stove over medium heat.

Oil the bottom of an oven dish and sprinkle with seasoning. Arrange the chicken in the dish and cover with sauce and cheese. Bake for about 30 minutes at 350º F or until chicken is cooked through. Cover this dish for the first 20 minutes and uncovered for the remaining cook time.

Remove halfway through cooking to stir around the sauce or flip the chicken breasts as needed. Uncover for the last 10 minutes to brown the cheese.

Bake longer if the chicken is frozen! Serve over your choice of pasta with an appetizer salad.

When I first moved out, I found this recipe very easy because I always forgot to take out the chicken breast to defrost and you can just bake it longer if it's still frozen! Plus you can add whatever you like and season to your own taste. I usually add more garlic - cause there's never enough. It's always delicious and difficult to mess up 😉
