Cherry Tarts Recipe

Preheat oven to 425ºF
4 cups pitted cherries
1 cup sugar (more or less depending on cherry ripeness/type)
4 Tbsp cornstarch
1 tsp vanilla
¼ tsp almond extract
1 Tbsp lemon juice

Directions:
Directions:
Heat cherries over low heat for about 5 minutes. Mix the sugar and cornstarch together and add to the cherries. Cook until saucy.

Remove from heat and add vanilla, almond extract, and lemon juice. Mix well and let cool.

Fill tart shells or pie shell with the cooled cherry mixture and bake in the oven at 425ºF until golden brown - 15 to 20 minutes.

The first full summer in Nick's new house, I decided to do something with the cherries from our tree. I spent a couple of days picking them all and then a few more with them covering the kitchen table for processing. I washed/pitted them all and dried some, stuck some in rum, froze some for later, and made tarts with the rest.

The recipe Erik and I found for the tarts was absolutely delicious and we wanted to share it! We used frozen tarts (Tenderflake) for the tarts, and made 'lids' by smooshing up a frozen pie crust we had that had cracked. If anyone makes yummy pastry, I bet it would be that much better!

It was difficult but, we did save a couple of tarts for when Nick returned home from work. Afterall, it is his cherry tree!!
