Ingredients: ~ 1 cup of sushi rice 1 cup cubed sushi-grade tuna Sesame seeds Sesame oil Mayonnaise Sriracha sauce Rice vinegar ½ cup edamame beans ¼ cup sliced green onion ½ cup thinly sliced red cabbage ½ cup cubed cucumbers 1 large avocado

Directions:Steam rice - add a tbsp of rice vinegar and fluff. Set aside.
Lightly cover cubed tuna with sesame oil and rice vinegar. Add a dressing of sriracha and sprinkle with sesame seeds, mix well and let soak.
Place ½ cup of rice into the bottom of each bowl and add edamame beans, cabbage, cucumber, and avocado cubes into "4 corners" leave space in the center for the tuna.
Place the tuna into the center of the bowl, cover with green onions and dress with a few slices of avocado.
Drizzle sriracha sauce and mayonnaise over top and sprinkle with sesame seeds. |

Notes: This recipe is easy to adjust for the fresh ingredients you might have on hand. Try adding grated or julienned carrots or green cabbage - or maybe bean sprouts!
Kris and Katie are true foodies! I knew I had to try this recipe when Katie sent the photo.
I couldn't get edamame beans so I used fresh peas in the shell. I also didn't have sriracha sauce so I made a sauce by mixing sambal (hot chili paste) with mayonnaise.
It was delicious!! This will definitely be served up in this kitchen again!
