3/4 cup granulated sugar
4 1/2 oz unsalted butter at room temp (1 stick plus 1 Tbsp.)
4 Large eggs
2 1/3 Cake flour, sifted
1 Tbsp Baking powder
1 tsp salt
3/4 cup whole milk
2 cups fresh cranberries
(1/2 cup chopped pecans if desired)

Directions:

Preheat oven to 350°. Coat an 8 1/2 x 4 1/2 x 2 1/2” loaf pan with butter.
Beat butter and sugar on medium for three minutes until light and fluffy.
Add the eggs one at a time and beat until combined
Combine flour and baking powder and salt, then fold dry ingredients into the butter mixture in thirds, alternating with milk.
Fold in cranberries and nuts if you’re using them.
Pour batter into pan.
Bake one hour
Let cool 10 minutes, then remove bread from pan
