½ lb. broccoli, chopped
1 ¾ cups boiling water
¼ tsp. salt
2 tbsp. minced onions
¼ cup melted butter
3 tbsp. flour
3 ½ cups evaporated milk
3 ¼ cups shredded cheese
pepper to taste

Directions:
Directions:
Cook broccoli in salted boiling water. Cook onions in butter until tender, but not brown. Blend in flour. Add milk and cook and stir until smooth and thickened. Add cheese, pepper, and broccoli. Stir until cheese is melted. Add salt to taste. Do not overheat soup. Makes 8 cups.
