4 tbsp. butter
2 tbsp. oil
2 lbs. onions, thinly sliced (7 cups)
1 tsp. salt
3 tbsp. flour
2 quarts beef stock, fresh or canned

Directions:
Directions:
In a heavy pan melt the butter with oil over moderate heat. Stir in the onions and 1 tsp. salt, and cook uncovered over low heat, stirring occasionally for 20-30 minutes; or until the onions are a rich golden brown. Sprinkle flour over the onions and cook, stirring for 2-3 minutes. Stir the hot stock into onions. Simmer another 30 minutes. Serve over toasted French bread with grated cheese.
