1 tsp. salt
1 tsp. onion powder
1 tsp. garlic powder
1 tsp. ground chili pepper
1 tsp. ground oregano leaves
1 tsp. dried sweet basil
1 tsp. dried thyme leaves
¼ tsp. black pepper
½ tsp. white pepper
2 lbs. unpeeled large shrimp
3 tbsp. olive oil
1 ½ cups chopped onion
1 cup chopped bell pepper
1 cup chopped celery
2 cups of chopped ham
6 cups of shrimp stock of chicken broth
1 tsp. minced garlic
½ cup uncooked rice
1 cup chopped tomatoes
1 cup sliced green beans
½ cup green onion tops

Directions:
Directions:
Add shrimp shells to 8 cups of boiling water. Boil down to 6 cups approx. till it is a rich broth. Combine the seasoning ingredients in a small bowl. Peel the shrimp and reserve the shells and heads for the shrimp stock. Sprinkle 2 tsp. of the seasoning mix over the shrimp. Heat the oil in a 5-quart pot, about 3 min. When the oil is hot add ½ of the onions, bell peppers, celery, ¼ cup of the ham, and 1 tbsp. seasoning mix. Cook stirring occasionally until browned. (5-6 minutes). Stir in 1 cup of the broth and the garlic and scrape the bottom of the pot. Cook till nearly evaporated. Stir in remaining ingredients and rice (save shrimp). Cook for 6 minutes. Add remaining broth and put in shrimp and simmer for 5 minutes.
