1 large carrot
1 large potato
1 medium onion
1 tbsp. butter or margarine
3 cloves garlic, crushed
1 bay leaf ¼ tsp. thyme
2 ½ cups chicken broth
2 cups 1% milk
1/8 tsp. salt
1/8 tsp. black pepper

Directions:
Directions:
Peel vegetables and slice them thin. Melt butter or margarine in a heavy saucepan over low heat. Sauté carrots, onion, potatoes, garlic, bay leaf, and thyme in butter for 1 minute. Stir in ½ cup chicken broth and cook, covered, until liquid has mostly evaporated, about 15 minutes. Stir in remaining chicken broth and milk. Cook, uncovered over medium heat, stirring occasionally until vegetables are tender about 30 minutes. Stir in salt and pepper.
