1 whole butternut squash (about 2-3 lb.)
1 14 oz. can chicken broth
3/4 cup apple juice
3-4 cups half and half (can use part milk)
1/4 tsp. ground nutmeg
1/4 tsp. ground cinnamon
Sour cream for garnish

Directions:
Directions:
Cook squash; it can be baked whole or halved or cooked in the microwave until tender. When fork tender, spilt the squash, scoop out and discard seeds. Remove squash from skin and put the squash in a blender with some of the chicken broth, and blend until smooth. Pour into saucepan. Add remaining chicken broth, apple juice, half-and-half, and spices. Blend with a wire whisk. Heat through on medium heat, almost to the boiling point, stirring occasionally. Serve with a dollop of sour cream and a dash of nutmeg.
