2-1/2 c. regular rolled oats
1-1/2 c. whole wheat flour
1 tsp. baking soda
1 tsp. baking powder
1 tsp. salt
2 tsp. ground cinnamon
1 tsp. ground allspice
3/4 c. shortening
Or 1/2 & 1/2 shortening & applesauce
3/4 c. granulated sugar
3/4 c. packed brown sugar
1 tsp. vanilla
2 eggs
Optional:1-1/2 c. raisins or Craisins

Begin by heating oven and placing oats on cookie sheet to toast. Bake for 15 minutes at 300º stirring occasionally. Cool. Lightly grease or spray two cookie sheets and increase oven temperature to 350º. Stir dry ingredients into a small bowl. Beat shortening and sugars until fluffy then add eggs one at a time beating in-between. Add vanilla. Stir flour mixture into creamed mixture until well blended. Stir in oats and raisins until well mixed. Using a 1/3 c. measure as a scoop, place rounded mounds of dough about 7 inches apart on prepared cookie sheet. 6 on a sheet. Flatten dough into a 5 inch round, even edges with a knife. Bake for 12-15 minutes.

Variation- you may make these into small cookies-baking time 7-10 minutes.
