1 1/2 Pounds Beef Flank Steak
1 cup chopped onion
1 green sweet pepper cut int 1/2 inch pieces
1 0r 2 jalapeno peppers, chopped (or use canned)
2 cloves of peeled minced garlic
1 tsp. chili powder
1 tsp. ground cumin
1 tsp. ground coriander
1/4 tsp. salt
1 8 oz can UNDRAINED stewed or diced tomatoes
2 tablespoons of chopped fresh cilantro
2 or 3 tsp. fresh lime juice(add when ready to serve)

Prep times 15 min. Cooking time 4 hrs. 6 Servings

The beef should be cut into about 4 pieces, and trimmed of fat--also note that a more tender cut of beef can be used if desired. Keep in mind that smaller pieces of meat will probably cook faster so check for doneness after about 3/4 of the recommended cooking time if using thinner or smaller pieces, so they don't become tough.

In a 3 1/2 quart slow cooker: combine all of above ingredients except lime juice. Cover and cook starting on high setting until bubbling, then reduce to low setting and continue cooking for 4 hours. (this produces a more tender meat than cooking on high the entire time. You could however cook on low the whole time for about 8 hours if time allowed). Keep covered during cooking, only stir briefly once or twice if desired and quickly replace lid.

At end of cooking time, remove beef to cut into strips then replace into crockpot mixture, and add 2-3 teasopoons of FRESH LIME juice to mixture. Serve with a slotted spoon. Serve over warmed tortillas, add desired shredded cheese, sour cream, guacamole, salsa or hot sauce, lettuce, green onion, etc.. fold, and serve.

About raw hot peppers: Don't touch eyes or face when cutting up hot peppers, as they will burn. Wash hands carefully or wear gloves.
You can substitute canned hot pepper or chilis, or just use salsa or hot sauce if you need to
