2 tbsp. butter
1 yellow onion, diced
2.5 lb. ground beef
1 cup dried bread crumbs
3/4 cup buttermilk
1/2 cup ketchup
2 eggs, beaten
1 tbsp. Worcestershire sauce
2 1/2 tsp. salt (or to taste)
1 tsp. ground black pepper
1 tsp. hot sauce
1/2 tsp. dried tarragon
1/2 tsp. Italian seasoning
1/4 cup br. sugar
1 tbsp. Dijon Mustard
1 tsp. cider vinegar

Preheat oven to 350º. Line a paking sheet with a silicone baking mat (?)
Melt butter in a skillet over medium high heat. saute onion in hot butter until soft and translucent. Cool to room temperature.
Combine cooled onion, beef, bread crumbs, buttermilk, ketchup, eggs, worcestershire sauce, salt, pepper, hot sauce, tarragon and Italion seasoning in a bowl; mix together well and let sit till breadcrumbs absorb moisture, about 10 minutes.
turn meeatloaf mixture out into the center of the prepared baking sheet and form into a 9 x 5 inch loaf.
Bake in the preheated oven for 45 minutes. While meatloaf is baking, whisk brown sugar, mustard and cider vinegar together in a small bowl. spread brown sugar glaze over the top of the meatloaf and continue baking until no longer pink in the center, about 30 minutes more. An instant read thermometer inserted into the center should read at least 160º.

When I have made this, I generally do not use quite as much ketchup. Also, I use what spices I have on hand. for the Italian spice i often just use a little basil, oregano and thyme instead of the pre-mixed Italian spice. I also usually do not bother with the glaze because I usually do not have Dijon mustard in the house, and I am not going to get it just for the occasional time that I make this delicious meat loaf. Even with these alterations or omissions, it is still moist and delicious.
