Directions:
Brown meat slowly. Spoon off excess fat ( I drain the sausage)
Add next 5 ingredients
Simmer uncovered for 30 minutes
Cook noodles In boiling salted water until tender. Drain and rinse ( Enough to fit into a 9x13 baking dish)
Combine remaining ingredients except for mozzarella cheese
Place half the noodles in a 9x13 baking dish ( try to make sure that the whole bottom is covered. Sometimes I have to cut noodles for the end of the dish
Spread with half the cottage cheese mixture.
Cover with half the mozzarella
Then cover the cheese with half the meat sauce
Repeat layers.
Bake at 375* for 30 minutes
Let stand for 10 minutes before cutting ( filling will set slightly)
* or assemble early: refrigerate. Be sure to allow 15 extra minutes or so in the oven
