4 chicken breasts (boned)
2 eggs beaten
1 c. bread crumbs
2 tbsp. lemon juice
⅔ c. chicken broth
4 slices Monterey Jack cheese

Directions:
Soak breasts in eggs for 1½ hrs. - roll in bread crumbs. Brown in 3 tbsp. of butter. Put into casserole so they lay flat. Mix broth and lemon juice, pour over chicken. Top with cheese slices. Cover with foil, bake 45 minutes at 350º.
