1/2 pound ground sausage
1 small onion chopped
8 oz sliced mushrooms
2 cloves garlic
4 c baby spinach
5 c chicken broth
5 lasagna noodles broken in small pieces
1 tsp dried oregano
1/2 tsp dried basil
3 Tbsp butter
3 Tbsp flour
1 c milk
1 c grated Parmesan cheese

In large sauce pan, brown sausage over medium heat and break up with spoon/spatula. Add onions, mushrooms and garlic. Continue to sauté until onions are translucent. Add 4 cups baby spinach and allow to wilt. Add chicken broth, broken lasagna noodles and spices. Simmer for 20 to 30 minutes until lasagna noodles are cooked/soft. In a separate sauce pan melt 3 Tbsp butter. Add 3 Tbsp flour and cook over low heat until lightly browned. Whisk milk into the flour mixture. When well combined add the Parmesan cheese continue to whisk until ingredients are well blended. Add cheese mixture to sausage mixture and stir. Cook over low heat for 15 to 20 minutes. Ladle into soup bowls and enjoy!
