2 heads of garlic

2 chickens quartered or parts of your choice, bone in/skin on
1 lemon, thinly sliced

1/3 c. rice wine vinegar
1/4 c. olive oil
1/4 c. vegetable oil
2 T. dried oregano
1 T. dried rosemary
1T. kosher salt
1 T. sugar
1 tsp. black pepper
1/2 tsp red pepper flakes

Directions:

Cut off top 1/4 of each head of garlic, drizzle with some olive oil and sprinkle with salt.
Wrap tightly in aluminum foil and roast in a 400 degree oven for 45 minutes.
When cool enough to handle, squeeze out the puree. You need 1/4 cup.

Combine the garlic puree with the rest of the ingredients, rub into the chicken, add lemon slices and refrigerate overnight.(Use a large freezer bag.)

When ready to cook, brush a large, heavy skillet with olive oil. Arrange chicken and lemon in the skillet. Roast, uncovered, for 20 minutes at 425 degrees. Turn the pieces over and cook an additional 30 minutes.
