Fresh Halibut Filets
6-7 shallots
3 cloves garlic
¼ cup olive oil
¼ cup butter
½ cup half & half
½ cup white wine
Capers
Fresh Basil, chopped fine

Directions:
Directions:
Sauté shallots and garlic in oil and butter on medium to low heat, (preferably in a wok).
For 3 minutes. Add Halibut, capers and basil. Spoon butter and oil mixture on top of halibut, cover and simmer till Halibut is done. Note: When cooked through Halibut will be white, it takes approximately 8-10 minutes, but time varies with thickness of filet, and over done Halibut taste like fish sticks. The last couple of minutes add wine and half & half. Server over basil sauce and angel hair pasta.
