Turkey Stroganoff Recipe

4 oz uncooked noodles (plain or whole wheat)
1 oz light sour cream
2 Tbsp flour
1 Tbsp olive oil
1 pound Turkey Breast Tenderloin (cut into bite size pieces)
8 oz slices fresh mushrooms
2 c broccoli florets
1 1/2 c chicken broth
1/2 tsp onion powder
1/4 tsp black pepper

Cook noodles according to package directions. Drain and keep warm. In a small bowl stir together flour and sour cream. In large skillet heat oil over medium heat. Add Turkey. Cook and stir for 4-5 minutes until no longer pink. Remove from skillet. Add mushrooms to skillet. Cook and stir for 3 minutes. Add broccoli. Cook and stir until broccoli is crisp tender and mushroom and browned and tender. Add broth, onion powder and pepper to skillet. Bring to boiling. Whisk in sour cream mixture. Cook and stir until thickened and bubbly. Stir turkey back into mixture and heat through. Serve over the warm noodles.
