2 Tbsp. yeast
1/2 c. warm water
5 c. hot water
1 c. brown sugar
2 Tbsp. salt
1/2 c. shortening or oil

Directions:
Directions:
Mix yeast in warm water with a bit of sugar and let it get bubbly.

Combine next 4 ingredients in mixer and blend well. Stir in salt and 6-7 cups whole-wheat flour one cup at a time. Mix for 10 minutes until gluten is formed. Add yeast mixture and about 8-10 cups of white flour. Dough should come away from sides of mixer. Let rise about 1 hour, punch down; divide and put into greased loaf pans and let rise again. Bake at 375º for 30-40 minutes. Makes 4 loaves.

For Mom (Jean) and I (Shirlee) this was our "go to" bread recipe. We have been making this since I was in High School at least, which is nearly 50 years. We would tease each other that someone must have changed the recipe because "yours is better than mine' I think it is just consistently making bread often enough to get the feel for the dough.
