Ingredients: 4-5 c. white flour 2 tsp. salt 2 Tbsp. active dry yeast 1 c. water 1/2 c. honey 1/4 c. butter 1 8 oz. cottage cheese 2 eggs 1 c. whole-wheat flour 1/2 c. quick oats 1 c. chopped nuts or seeds (sunflower, flax seeds, cooked cracked wheat etc.)

Directions:Generously grease 2- 9 X 5 X 3 inch loaf pans with shortening or Pam. Spoon flour into measuring cup and level off. Combine 2 cups of the flour, salt and yeast in a large bowl; mix well. Heat water, honey, margarine and cottage cheese in a medium-size saucepan until very warm. Butter does not need to melt. Add warm liquid and eggs to flour mixture and beat at low speed until moistened then beat another 3 minutes at medium speed. Stir in whole-wheat flour, oats and nuts plus enough of the remaining flour to form a soft dough. Knead for 10 minutes until smooth and elastic. Place dough in a greased bowl turning once to cover dough with oil; cover. Let rise in a warm place until double in volume about 1 hour. Punch dough down and let rest covered with inverted bowl for 15 minutes then shape into 2 loaves and place in prepared pans. Cover; let rise in warm place until double in volume, about 1 hour. Bake in 375º oven for 35 minutes or until loaves sound hollow when lightly tapped. Remove from pans immediately; butter tops and cool on wire racks. |
