4 pounds small potatoes (whole or cut in half)
1/3 cup vegetable oil
3-4 cloves chopped garlic
1 cup chopped onion
2 Tbsp chopped fresh rosemary
Salt & pepper, to taste

Heat oven to 425º. Place potatoes, oil, garlic, rosemary, salt and pepper in a large baking pan with sides. Toss well to mix all ingredients. Bake for 30 to 45 minutes, stirring occasionally and gently until potatoes are cooked and lightly browned.
