Zucchini Nut Bread Recipe

3 cups unsifted flour
2 tsp ground cinnamon
1 tsp baking soda
1 tsp salt
1 tsp baking powder
1 Tbsp grated lemon peel
2 c grated unpeeled zucchini
2 c sugar
1 c vegetable oil
4 eggs
1 c raisins
1 c finely chopped walnuts

Preheat oven to 350º . Grease and flour two bread pans (9x5x3)

Sift flour together with cinnamon, baking power, salt, baking soda. In separate bowl, mix together lemon peel, grated zucchini, sugar and vegetable. Add to dry ingredients and mix with electric mixer until smooth. Add raisins and walnuts and c stir to combine.

Pour batter into prepared pans, dividing evenly. Bake for 55 to 60 minutes or until cake tester inserted into center comes out clean.

Cool in pan for 10 minutes. Remove from pan and cool completely on wire rack. Cut into slices and serve. Makes two loaves.
