Bottom (Shortcake Layer)
1 1/4 c flour
3/4 tsp baking power
1/2 tsp salt
1/2 c butter (softened)
1 egg
3 Tbsp sour cream/plain yogurt
1/3 c confectioner sugar
Mix wet and dry ingredients until they form a ball. Press into the bottom of un greased 9 x 13 pan.

Pineapple Filling Layer
1 20 ox can crushed pineapple
1/2 c sugar
3 Tbsp cornstarch
Combine ingredients in medium saucepan. Cook over low hear until bubbly and slightly thickened. Add one Tbsp butter after removing from heat. Cool slightly and then pour pineapple filling over dough and spread to edges.

Cheesecake Layer
2 8oz packages cream cheese
16 oz cottage cheese
1/2 c sugar
1/4 c flour
1 tsp vanilla
3 eggs
Mix together with electric mixer or by hand until well combined. Pour cheesecake mixture over pineapple slowly. Spread to edges.

Bake at 350º for 1 hr and 15 minutes or until light golden brown. Lightly sprinkle with cinnamon about 45 minutes into cooking.

Allow to cool and refrigerate.
