1 1/2 cups packed brown sugar
2/3 cup veg. oil (or 1/4 c. coconut oil & 1/2 c. applesauce)
1 egg
1/2 tsp. vanilla
1/2 tsp. almond extract (only vanilla could be used if you prefer, but then do a whole tsp.)
2 1/2 cup all purpose flour
1 tsp. salt
1 tsp. baking soda
1 cup milk (or 1/2 cup milk & 1/2 cup rhubarb juice)
2 - 3 c. rhubarb, chopped (to your taste)
1/2 c. sliced almonds (or coconut)
1/3 c. white sugar
1 tbsp. butter, melted
1/2 c. sliced almonds

Preheat oven to 350º. Grease two 9 inch round pans
In a large bowl, beat brown sugar, oil egg, and extracts together until smooth. combine flour, salt and bakn soda; add to sugar mixture alternately with milk. Beat until smooth. Stir in rhubarb and 1/2 c. almonds or coconut. Pour into prepared pans. In a small bowl, combine white sugar and butter. Stir in remaining sliced almonds, sprinkle topping over batter. Bake for 30-35 minutes, or until the cake tests done.
