2 c. uncooked spiral pasta
1 c. sour cream
1 c. salsa
1 tsp cumin
1 tsp garlic powder
1 teaspoon onion powder
1 can (15 oz) corn, drained
1 can (15 oz) black beans, drained and rinsed
2 c. cooked shredded/chunked chicken ( I used rotisserie)
2 c. shredded cheese ( I use taco seasoned cheese)

Garnish: 2 green onions sliced and 4 campari tomatoes, diced
.... could also use avocado chunks/slices

1. Heat oven to 350 degrees. Spray 9 x 13 baking dish with cooking spray.
2. Cook pasta according to package directions to al dente
3. While pasta is cooking, combine sour cream, salsa, cumin, garlic powder and onion powder in a large mixing bowl
4. Drain pasta and add to the sour cream mixture. Stir to combine. Add the corn, black beans, chicken and 1c. of the shredded cheese. Stir to combine.
5. Pour into the baking dish and sprinkle the remaining cheese on top. Cover with foil and cook for 25 minutes.
6. Remove foil and cook an additional 5 minutes

Garnish with green onions, tomatoes and avocado chunks if desired.

This is a great way to use Rotisserie chicken! The recipe came from Pinterest but I adapted to our tastes. Perfect quick supper with very little effort!!
