6 shredded apples
2 c. sugar
1 c. shortening
2 eggs
2 c. flour
2 tsp. nutmeg
1/4 tsp. salt
2 tsp. soda
2 tsp. cinnamon
1/4 tsp. coves
1 tsp. vanilla
chopped nuts
Vanilla Sauce:
1 c. sugar
2 Tbsp. flour
1 c. cold water
1 Tbsp. butter
1 tsp. vanilla

Directions:

Shred 6 cored apples (no need to peel) cover with 2 cups of sugar; let stand 10 minutes. Cream with 1 cup shortening or butter. Add remaining ingredients and blend well. Add chopped nuts if desired. Bake in a 9 X 13" cake pan for 45 minutes at 350º. Serve warm with vanilla sauce.

Sauce- whisk sugar and flour in a small sauce pan until blended then add water- bring to a boil for 3 minutes and then add butter vanilla and a dash of salt. Serve over slice of cake.

Variations: Frost with cream cheese frosting or make muffins. I like to make a crumble topping using equal amounts of melted butter, flour and sugar sprinkled with a bit of cinnamon- stir with a fork to blend into a crumble. Place a spoonful on top of each muffin before cooking. Yum Yum!
