Meatballs:
2 pounds ground chicken
3 garlic cloves, minced
1 egg
2/3 cup bread crumbs
1 1/2 tablespoons cajun seasoning
1/3 cup parmesan cheese
1 tablespoon parsley
Salt and pepper

Sauce:
4 tablespoons butter
1 cup onion, finely chopped
1/2 cup bell pepper, finely chopped
4 tablespoons flour
2 tablespoons (or more!) cajun seasoning
3 cups chicken broth
1/2 cup heavy cream

Meatballs:
Mix together ingredients until well combined. Form into meatballs about 1" in diameter. In a large skillet, heat oil over medium high heat. Add the meatballs, and brown on all sides until they are golden brown. Remove the meatballs, and place on plate.

Sauce:
In the same pan, melt the butter over medium low heat. Add the onions, and stir often until they become translucent. Add the bell pepper, and cook for another 2 to 3 minutes. Whisk in the flour, and cook, stirring constantly, for 2 to 3 minutes. Add the chicken broth slowly, whisking constantly until it thickens a bit. Add the cajun seasoning and pepper, and stir well.

Return the meatballs to the skillet, and reduce the heat to low. Simmer for approximately 8 to 10 minutes or until the meatballs are cooked through.

Stir in the heavy cream.
