6 cups strawberries halved {2 - 3 pints}
1 1/4 cups of sugar
1 1/2 cups sifted plain flour
2 1/2 tsp. baking powder
1/2 tsp. salt
1/2 cup shortening {Crisco}
1 tsp. vanilla
2 eggs
3/4 cup milk

Directions:
Toss strawberries with 1/2 cup sugar in a bowl
Crush berries slightly, if desired
Set aside while preparing cakes.
Sift the flour, baking powder, and salt together. Set aside.
Beat shortening, extract and remaining 1 cup sugar in mixing bowl until light and fluffy.
Add the eggs, one at a time, beat throughly after each addition.
Alternately add dry ingredients in thirds and milk in halves, beating only until
blended after each addition.
Spoon batter into 10 well-greased 6oz. custard cups and set on large baking sheet.
Bake at 350º about 25 minutes, or until cakes test done.
Turn cakes upside down in individual serving dishes.
Lift off cups and serve warm, topped with sweetened strawberries, and
whipped cream.
