Potatoes- 3lbs. of russet peeled and quartered salt/ pepper 1/4 cup butter 1/2 cup milk. Stew- Butter for dish 1/4 cup butter 2cups pearl onions(peeled) 3 carrots cut 1/2 inch 4 stalks celery cut 1/2 inch pieces salt/pepper 1/3 cup flour 4 cups milk 1/4 cup chopped parsley 1/2 cup frozen peas 1 1/4 lb haddock cut into 2-inch pieces 1 1/4 cup chopped salmon 2-inch pieces.

Butter a 9x13 baking dish. in a casserole dish, melt butter add onions celery carrots 1 tbsp thyme salt pepper cook about 10 min. Stir in flour cook another 5 min. while you stir. Now add milk and constantly stir until mixture comes to a boil reduce heat and simmer 5 min until thickens. Add fish peas parsley thyme salt pepper stir so fish does not break up and heat 5 min. Pour mixture into baking dish Top with the mashed potatoes put under a broiler about 10 inch from element broil until golden about 8 min.

Cook the Stew while potatoes are simmering, then assemble the pie and brown it. You can change up the fish used to your taste. I am not a fan of peas but they add color.
