6 c. frozen hash browns
2 c. diced ham
1 1/2 c. shredded cheddar or Monterey jack with hot peppers
1/2 c. green onions, sliced
8 eggs
1 (12 oz.) can evaporated milk
1/2 tsp. salt and pepper

Directions:
Directions:
Spray dish with Pam. Layer hash browns in bottom of dish, then layer the ham, cheese and onions. Beat eggs in big dish and add milk. Add salt and pepper and mix together. Bake at 350ºF for 45-55 minuutes.
Note:You can make the night before if you want and refrigerate. You may need to bake for 55-60 minutes if refrigerated overnight. If you have the ham diced, cheese grated and onions sliced, it is easy to put together the morning you will bake.

This makes a 9x13 dish.
