2 cups flour
2 cups sugar
2 tsp baking powder
3 tsp baking soda
1 tsp salt
2 tsp cinnamon
1 1/4 cup oil
3 cups grated carrots
4 eggs
1/2 cup nuts
2 tsp vanilla

Frosting
4 oz cream cheese
1/4 cup butter
2cups confectioners sugar
Directions:
Directions:
Combine & mix well first 6 ingredients
Add oil and mix well
Add eggs & mix well
Mix in carrots
Stir in vanilla and nuts
Bake in greased and floured 9x13 pan at 350º for 50-60 minutes

Frosting
Beat cream cheese & butter until light & fluffy
Beat in sugar
Spread on cooled carrot cake
