3 lbs of beef tenderloin

Spice Rub:
1 T. chili powder
1 T. ground coriander
1 T. packed brown sugar
1 tsp. salt
1 tsp. dry mustard
1 tsp. paprika
½ tsp. garlic powder
¼ tsp. cayenne powder

Directions:
Directions:
1. In a small bowl, combine the spice ingredients. Rub all over the beef. Place beef in fridge to dry cure for 24 hours.
2. Remove beef one hour before roasting. Heat oven to 500º.
3. Place beef in a roasting pan with a rack. Bake for 15 mins (or 5 mins. for each pound if using a larger tenderloin.)
4. Turn off the oven but DO NOT OPEN OVEN. Allow the beef to roast for another 1¾ - 2 hours until internal temperature reaches 145º for medium rare.
5. Remove beef from oven. Tent with foil and let rest 15 minutes before serving.

I love this for Christmas or any special occaision. I've become a big fan of dry curing in the fridge with rubs. The flavor is worth it although you will need larger cuts of meat as they will shrink and you need to plan ahead.
