1 boneless skinless chicken breast 2 tbsp olive oil 2 cups of canola oil for frying. 4 corn tortilla's (6 inches) cut into 1/2 inch strips. 3 halved cloves garlic 3 tomatoes qurtered 1 onion quartered salt/ pepper 1-quart chicken stock 1/2 cup shredded Mexican cheese 1/2 avocado cut into 1/2 inch slices 2 tbsp chopped fresh cilantro hot sauce of choice for the table.

Halve the chicken breast lengthwise and rub with olive oil In a fat fry pot heat canola oil and half the tortilla strips fry a minute or so until brown. transfer to a plate with paper towels. In a blender put garlic onion and tomatoes work to form a puree Pour into a saucepan add salt pepper bring to a boil and simmer for 5 min. Add chicken stock and let cook another 3 min. Cook chicken in a skillet with some olive oil set aside. shred chicken and divide into 4 bowls add tortilla strips Ladle tomato mixture on top. Add shredded cheese and avocado and cilantro on top.
