1 gal. garden tomatoes
4 cups chopped peppers mixed
green chili, jalapeņo, bell pepper, yellow, red
2 cups onion chopped
1 clove garlic chopped
1/4 cup salt (scant)
1/4 cup vinegar
1/8 cup sugar
1 Tbsp. oregano to taste
1 small can tomato paste (enhances color)

Directions:
Place tomatoes in boiling water to peel skins. Peel and chop tomatoes. Cook till sauce is as thick as desired. Place in sterile jars. Seal lids and water bath for 40 minutes. Makes about 12 pints.

Make this to your own taste, chop, puree or leave chunky. If you open the jar and it's not hot enough add some chili pepper or Mexican seasoning to taste. Also good to freshen it up with fresh green onion and cilantro if you have some on hand.
