1 env. Knox gelatin
½ c. pineapple juice
1½ c. boiling water
⅛ c. sugar
1½ pts. cream
½ lb. marshmallows
3 slices (or more) diced pineapple
¼ c. Maraschino cherries
juice of ½ an orange
dash of salt
angel food cake

Directions:
Directions:
Soften Knox gelatin in pineapple juice. Add boiling water and sugar. Let cool and congeal. Whip cream and cut into it marshmallows. Add pineapple, cherries, orange juice, and salt. Add cream mixture to gelatin (like egg whites). Slice a large angel food cake into about ½" slices. Line bottom of Pyrex pan with cake, then mixture, cake, then top with mixture. This amount fills 2 pans and serves 12-16. Make at least 24 hours ahead of serving time. Cover with wax paper.
