¾ c. veg. oil
¾ c. buttermilk
2 c. flour
2 c. sugar
2 tsp. soda
2 tsp. cinnamon
½ tsp. salt
2 tsp. vanilla
2 c. shredded carrots
1 c. raisins
1 can 8 oz. can pineapple
1 c. walnuts
1 c. flaked coconut
FROSTING:
1 pkg. 8 oz. cream cheese
4 to 4½ powdered sugar
1 to 2 tbsp. cream
1 tsp. vanilla

Directions:
Directions:
Beat eggs, oil, and buttermilk. combine flour, sugar, soda, cinnamon, and salt. Add to egg mixture and mix well. Stir in vanilla, carrots, raisins, pineapple, walnuts, and coconut. Mix well. Pour in greased 13x9" pan. Bake at 350º for 45 to 50 minutes. Cool. FROSTING: beat all ingredients till smooth.
