10 lbs. tripe 1 large can juanitas mex. style hominy cilantro green onions 1 white onion 1 clove of garlic 1whole green chili plenty of salt 2 lbs. beef patas.

cut tripe into bite size pcs. clean both tripe & patas well put in lrg. pot along with garlic clove green chili sliced green onions {1/2} bundle cilantro stems & whole white onion. let boil hard for 20 min. bring to slow boil adding hominy continue for 3 hrs.
