1 cup self rising flour plus more to coat
2 lbs. cod
1 egg white
1/2 cup light beer
1 teaspoon curry powder
1 teaspoon baking powder
2 Potatoes
Peanut oil

Directions:
Directions:
Heat oil in frying pan to 350º. In a bowl whisk together flour, baking powder, curry powder and beer. Whisk egg white until there are stiff white peaks and fold into batter.

Place some flour in a bowl and add a dash of curry powder. Season cod with salt then coat in flour. Knock off extra flour and put unto batter mixture. Make sure all of the fish has batter and add to the hot oil.

While fish is cooking, baste with oil. Let the first side cook until golden brown, about 3 minutes. Flip and contained to baste. Take the pan on and off the heat so the oil doesn’t get too hot.

Chop potatoes into strips and roll in paper towel to remove moisture. Add to hot oil and cook until golden brown. Enjoy!
