Halibut with Lentils Recipe

1 teaspoon olive oil
1/4 cup leeks, chopped
1/4 cup carrots, chopped
2 garlic cloves, minced
1 cup dry lentils
1 (14oz) can chicken broth
1/4 cup celery
2 teaspoons dried parsley
Salt and pepper to taste
2 (6oz) halibut fillets
Mixed greens

Salad dressing:
2 teaspoons olive oil
2 teaspoons white wine vinegar
1 teaspoon honey
Salt and pepper to taste

Directions:
Directions:
Heat oil in a medium saucepan over medium-high heat. Add leeks, carrots and garlic. Sauté 2 minutes. Stir in lentil and broth. Bring to a boil. Cover, reduce heat and simmer 25 minutes or until lentils are tender and liquid is nearly absorbed. Remove from heat and add celery and parsley. Salt and pepper to taste.

While lentils are cooking grill the halibut in 500º preheated grill for 5 to 8 minutes.

For the dressing: whisk the oil, vinegar and honey. Salt and pepper to taste.

To serve: Toss greens with dressing. Place grilled halibut fillet on top of greens. Top spoonful of lentils mixture to halibut. Enjoy!
