2 pounds zucchini (skinny ones, no bigger than 1 inch around taste best)
salt and fresh ground black pepper
2-3 tablespoons fresh lemon juice
3-4 tablespoons olive oil
1/2 cup shaved Parmesan cheese
1 pound Romaine or Boston lettuce

Trim the ends off the zucchini and sliced into 1/4 inch round pieces. Then coarsely chop into bite-size pieces and set aside.
Prep the lettuce by washing and drying, discarding any imperfect leaves.
In a salad bowl whisk together the olive oil, lemon juice, and salt and pepper to taste until well combined. Add the zucchini pieces and toss until well coated.
Please the thin slices of Parmesan over top of the zucchini.
Divide the lettuce among four serving plates then spoon the chopped season zucchini pieces on top of the lettuce. Garnish with a few extra shavings of Parmesan. Shake on a bit of additional salt and pepper. Serve
