Directions:Heat oven to 350°F. Spray a 9-inch glass pie plate with cooking spray. In 10-inch nonstick skillet, cook beef and onion over medium-high heat for 5 to 7 minutes, stirring frequently, until thoroughly cooked; drain. Pour in 2/3 cup of the enchilada sauce; reserve the remaining sauce. Stir in taco seasoning mix, chilies, and frozen corn; heat to boiling. Reduce heat; simmer uncovered for 3 to 4 minutes, stirring frequently until thickened. Place 1 tortilla on a pie plate; top with 3/4 cup beef mixture and 1/4 cup cheese. Repeat layers 3 times. Top with the remaining tortilla, and press down to flatten. Pour remaining enchilada sauce and sprinkle remaining cheese over top. Bake uncovered for 20 to 25 minutes or until hot and cheese is melted. Cool 10 minutes. Top with remaining ingredients. |

Notes: I wanted so bad to love, I wanted to feel as if for once in my life it was normal, I got married about 25 years ago, I was only 26 years old, with no real guidance, and married for all the wrong reasons when all of the red flags were there, but with no elders to warn me, I never saw them or even knew what to look for, so when I looked at my life now versus then, I ask myself, what if? What if you had someone in place to teach you about life, men, expectations, goals, dreams ext... Would you be going through the health and healing process and would you be experiencing the doubt of someone loving you? Or would you be dealing with the same type of circumstances regardless? You have no idea of what life had to offer you either way. But Why?
