1 lb ground beef
1 med size onion
1 can tomato soup
1 can cream of mushroom soup
Almost 2 cans water
1/2 cup pimentos
8-10 oz egg noodles
1 lb processed cheese
1/4 lb butter

Directions:
Directions:
Cook noodles and drain. Brown ground beef in dry skillet. In another skillet, fry onions until they are limp. Mix all together and cook in oven until cheese is melted.

I was in the process of making this on December 23, 1982, when a tornado came through Malvern, AR, which is where we lived at the time. I had the casserole all put together but had not yet put it in the oven. Our entire family ended up meeting up at our house on Dogwood Trail, but it took several hours for everyone to finally make it there. Power lines and trees were down all over town, and it was quite hectic trying to locate everyone and get the family all together! We ended up traveling to my sister's house on Country Club Road (approximately 5 miles south of Malvern) because she had electricity, and that is where we were able to bake it and finally eat dinner. I think of this experience every time I make this dish, but I don't think it has ever tasted as good as it did the night of the tornado!
