Brinlee's S'Mores Pie Recipe

Ingredients: 1 stick Butter softened
1/2 c. Sugar
1 Egg
1 t. Vanilla
1 c. Flour
1 c. Graham Cracker Crumbs crushed (if Brinlee is cooking with a hammer)
1 t. Baking Powder
7 oz. Marshmallow Creme (1 container)
8 Hershey's Bars
1 c. Marshmallows
1/4 c. Chocolate Chips

Directions:Preheat oven to 350º and spray a 9" pie plate with baking spray. In a large bowl beat butter and sugar together until combined, then add egg and vanilla. Stir them in. Mix in flour, graham cracker crumbs and baking powder. Divide the dough in half. Press half the dough in the bottom and up the sides of the prepared pie pan. Spray the spatula before spreading the marshmallow creme. Evenly spread the Marshmallow Creme over the bottom crust. Separate chocolate squares and place on top of the Marshmallow Creme. Place 1 cup of marshmallows on top. Use the remaining crust, pat sections of dough on top of and around all the marshmallows. They will still show through and that is great! Sprinkle with ¼ c. chocolate chips, then bake 20 minutes until lightly browned. Remove from oven and set it on a wire rack. Let cool completely before cutting, or you will have a gooey mess. |

Notes: This was Brinlee's choice for our baking day during their summer visit. It turned out perfect. When I sent photos to Jim, he said he was not surprised to see Brinlee using a hammer when baking.
