4 boneless skinless chicken breast halves (I use Costco chicken)
½ cup flour
3 tbsp. olive oil
1 cup chicken stock
3-4 tbsp. capers, drained
2-3 tbsp. lemon juice
3 tbsp. softened butter

Directions:
Directions:
Preheat oven to 350ºF.

Cut chicken breasts in half crosswise.

Sprinkle with salt & pepper.

Place flour in a bowl.

Dip chicken in flour to coat both sides.

Heat 1 tbsp. oil over medium-high heat in large skillet.

Brown chicken in batches, adding additional oil as needed.

Transfer chicken to an ungreased 9x13 in baking dish.

Add chicken stock, capers, and lemon juice to pan, stirring to loosen browned bits from pan.

Whisk in butter, 1 tbsp. at a time.

Pour sauce over chicken and bake 7-10 minutes or until done.
