Meatballs:
8 - 10 ground pork
1 TBSP fish sauce
2 tsp white vinegar
1/3 cup finely chopped green onions
1 clove garlic, minced
pinch of black pepper
2 tsp lemongrass paste
1.5 TBSP oil for cooking

Vietnamese Dressing
3 TBSP white sugar
3 TBSP fish sauce
2 TBSP rice wine vinegar
2 TBSP lime juice
1/3 cup water
2 gloves finely chopped garlic

Serving:
100 g / 3.5 oz vermicelli noodles
Big handful of bean sprouts
Few shredded lettuce leaves
Julienned carrots and white raddish
Handful of cilantro sprigs, mint
Lime wedges

Meatballs:
Mix all ingredients except oil
Shape into 6 mini hamburgers patties
Heat oil in a skillet over medium heat, cook patties 3 min each side.

Noodles:
Boil water more than enough to cover dried noodles. drop noodles into
boiling water and cook for a few minutes, al dente. Run cold water and
drain

Assemble Bowls:
For large group, arrange as follows: Place noodles at center of large platter
Carrots, lettuce on one side, remaining veggies on opposite side. Place meat
patties on top of noodles and sprinkle a little sauce over patties. Serve the
remaining sauce on the side to sprinkle on veggies.

There's plenty of options: Other veggies suggested: shredded cabbage, other leafy
greens, cucumbers, finely sliced asparagus etc.
