Ingredients:
Ingredients:
1 lb. uncooked shrimp, peeled and deveined (I use Costco shrimp that is already peeled and deveined)
1 tbsp. pure olive oil
2 tbsp. finely chopped garlic (I use already prepared chopped garlic)
1½ cups white wine (I use Pinot Grigio)
½ cup lemon juice
1 tsp. Italian seasoning mix
½ cup softened butter
½ tsp. finely chopped fresh parsley
salt & pepper
½ cup grated parmesan cheese

Directions:
Directions:
Heat a heavy-bottomed skillet and add the olive oil.

Add the shrimp and cook until pink.

Remove shrimp from pan, add garlic and cook for 2-3 minutes, then add white wine.

Next add lemon juice, and reduce the wine by half.

Next add the Italian seasoning mix, reduce to low, and add the butter 1 tbsp. at a time. If pan is too hot, the butter will separate.

Add shrimp back to pan, add parsley, salt and pepper, sprinkle with grated parmesan cheese.

Personal Notes:
I think this may have been originally called Red Lobster Shrimp Scampi, that Walt asked me to make years ago.
